Adding cauliflower into a traditional potato salad recipe creates a surprisingly lighter version of an old fashioned favorite. Ideal for dieters or those seeking healthier food choices this is a salad that will become a favorite for your family and friends.
With the zing of mustard and all the flavor of a traditional potato salad the cauliflower adds a delightfully light texture. If you don't know the ingredients in this side dish it is difficult to imagine that it is not the classic salad recipe.
I also add ginger and turmeric to my recipe. These are anti-inflammatory spices which add yet a healthier twist to this salad favorite. This really is the perfect salad to serve for any occasion or season. It is a refreshingly filling side dish.
I use Hellmann's Light Olive Oil Mayonnaise
Basic salad ingredients:
4 cooked and cubed potatoes
2 cups cooked diced cauliflower
1 stick of celery diced
1/2 large yellow onion
1 large carrot shredded
6 eggs chopped or shredded
Mustard dressing mix for potato salad:
1 cup Hellmann's Mayonnaise
2 tablespoons mustard
1 teaspoon turmeric
1/2 teaspoon ginger
1/2 teaspoon pepper
1/2 teaspoon salt
It is the Cauliflower That Makes This Recipe Unique
By reducing the amount of potato in this salad you also greatly reduce the calories and carbs that you would otherwise have consumed. This is definitely a much more diet friendly recipe compared to the classic potato salad.
The beauty of cauliflower is that it blends itself nicely into a variety of dishes and can be easily used to replace potato. Cauliflower is a vegetable that is low in calories, wonderfully filling, yet high in nutritional benefits. It is blessed with a bland flavor so that it easily disguises itself amid the flavors surrounding it.
The above ingredient list is for a very large batch of this salad so ideal for when company is over or to serve up for more than one meal. For a smaller batch simply cut the ingredients in half.
Step by Step Directions
Dice onion and celery and add it into the bowl. Optional vegetables are radish and green or red pepper.
Dice potatoes and put in a large bowl. You can chop or grate the eggs. I grate both my eggs and carrots.
Dice cauliflower and add it into the bowl. Season with your preference of spices and stir in mayonnaise.
Serve it up with Your Favorite Dishes
My husband had eaten half the bowl of potato salad before I asked him if he realized that there was something very different about this batch. He hadn't noticed.
He was quite surprised when I told him that I had replaced a large bulk of the potato with cauliflower. Then I explained to him the health benefits and he was quite impressed with that information.
I find the cauliflower salad to have a nice light texture compared to the classic potato version but you can give this recipe a try and see what you think. It certainly adds a much healthier twist to it.
