For years I made my pudding with white rice but the first time that I tried it with the brown variety I was hooked. It gives this dish a delightfully distinctive texture and flavor that truly surprised both myself and my husband. We won't ever go back to our old recipe. This one is too delicious.

The rice pudding is ready when it reaches a thick creamy texture. Remove from heat and at this point stir in one teaspoon of vanilla. Serve warm or cold. For a nice added touch you can add a dab of whip cream to the top. We enjoy ours warm with a dab of ice cream on top.
